Mrs. Wilkes Fried Chicken

Last week we visited Savannah and ate at Mrs. Wilkes.  My favorite and a standard that is always available at Mrs. Wilkes is her fried chicken.  I have used this recipe and it turned almost exactly like the fried chicken I enjoy so much at Mrs. Wilkes in Savannah.  This recipe comes from her cookbook, “Famous Recipes from Mrs. Wilkes Boarding House in Historic Savannah.

Mrs. Wilkes Fried Chicken

2 1/2 lb fryer, cut up and sprinkled with salt and pepper

2 tbsp.  evaporated milk

2 tbsp.  water

Pour the above ingredients over chicken and marinate about ten minutes.  Dip chicken in bowl of all-purpose flour.  Shake off excess flour.  Deep fry in Wesson oil at 300 degrees or pan fry on medium (making sure oil is hot before putting chicken in).  Make sure chicken is covered with oil at all times.  Fry until golden brown.  (Same recipe may be used for Pork Chops.
