A Southern Blue Cheese Salad Dressing and Homemade Croutons

One of my husband’s favorite salad dressings is blue cheese dressing.  I realized I haven’t made that for him in a long time so as part of our Valentine meal, I made the dressing for him.  I do not remember the recipe I used before and I started browsing through my cookbooks.  This recipe was in one of my Southern Living cookbooks that came from the Southern Living Magazine.

This is super easy to make and it does make me feel a little ashamed that I haven’t made it for my husband before.

Creamy Blue Cheese Dressing

1/2 cup sour cream

2 tablespoons mayonaise

juice of 1/2 lemon

tops of 2 green onions, chopped  ( I omitted these and my husband still raved over the dressing)

3/4 cup (about 4 ounces) crumbled blue cheese

1/2 teaspoon worcestershire sauce

salt and sugar to taste  (Optional)  We did not use this at all

Combine all ingredients and mix well.  Chill for a few hours so flavors will blend.

Can you see the glow from the candlelight?  I work until 6 PM each day and my husband had a romantic dinner table set for Valentine’s.  We had steaks that he prepared on the grill and I really like his steaks better than anyones.  I thought that was very sweet and it was so pleasant to come home from work and have a romantic special meal waiting for me.

Now, let’s talk croutons.  I started making my own croutons because I like crisp croutons on my salad but I don’t like them when they are extra hard.  Yes, they are cheaper but that isn’t the only reason I make my own.  I always have a few slices of bread left over and I freeze the slices in the freezer until I am ready to prepare some more croutons.  I got the idea from Ina Garten and she makes her’s in a saucepan on the stovetop.  Well, you probably will not believe this but I actually like the way I prepare them better.  Ina’s are good but I just like the texture of the ones I have developed better.

My Homemade Croutons

6 slices of bread and it should be consistently the same kind of bread  (all white bread or all wheat bread)

Trim the crusts from the bread.  Cut into cubes.

Place on a cookie sheet that has rims or edges and has been sprayed with olive oil spray

Spray the croutons with the olive oil spray

Place in a preheated 350 degree oven and bake until desired consistency (about 10 to 15 minutes)

Remove from oven and cool completely.  Please into a storage container and keep in pantry.  These croutons are very durable and last for a long time.

I was very encouraged to see Blue Cheese available locally and when I first started making blue cheese dressing in the 80’s it was so hard to find in my part of the state of North Carolina.  It is so wonderful to have so many products available right at our fingertips, even in the middle of winter.
