The Microwave and an Easy Cheese Sauce

I like to prepare broccoli with cheese sauce for either Thanksgiving or Christmas.  This year I chose Thanksgiving.  I have always used the Campbell’s Cheese Soup for my sauce and I assure you that if you want to use it and your family likes it, by all means use it.  However, I thought there might be an easier way to make the sauce and I discovered the recipe I am sharing with you today.

First of all, I want to say that I think the microwave is a wonderful kitchen appliance.  It is fantastic for melting chocolate and I learned that from Ina Garten.  Now I can make bark for Christmas and it is so easy to melt the chocolate in the microwave  I also like to melt my butter or margarine in the microwave for recipes and I like to soften my butter or cream cheese in the microwave too.

I made this recipe in the microwave and it was the easiest recipe I used for all of my Thanksgiving preparation.  I used Cabot Farm cheese and that is an association of dairy farmers in the Northeastern US that produce the cheese.  It has a little bite to it but it is great in cheese recipes and of course, Ina Garten taught me that too.

The cheese sauce recipe is in the middle of the page and I got the recipe from our local area cookbook, Market to Market.

For the broccoli, I prepared it in the microwave too and let it cook for approximately eight minutes.  I think the texture would have been better if I would have cooked it for five minutes and proceeded to drain it and added the cheese sauce to it.  This sauce would work well with cauliflower and other vegetables.

Being southern, I am also thinking this might work well as a sauce in a dish of macaroni and cheese.   Delicious!
