Hometown Recipe – Pineapple Casserole

I live in a small town in the foothills of North Carolina with a population of about 8,000 people.  I have lived in this town since 1978 and I really do like living here.  As I started to think of my posts for this week, I decided I wanted to feature some of our hometown cooks.  I went through several of my local cookbooks and found recipes that are just a little different.

When you visit the South, you expect Country Ham, Fried Chicken and Sweet Potato Pie but there are thousands of cooks and recipes that feature many other unique dishes. The one I am featuring today is one that I have eaten at some type of event in the past and I do remember it as being unusual but very tasty.

This is from our local cookbook for Mt. Zion Lutheran Church 1993 edition and the person submitting it, Jenny,  is someone I have known for a long time.  Hope you enjoy this very different way of preparing pineapple.
