I love peanut butter and I eat it for lunch a lot. My husband loves it too and usually takes a peanut butter sandwich for lunch everyday. As he has found a higher fiber bread that he likes, he can eat a sandwich for lunch and it will not effect his blood sugar. He works part-time and delivers tires for a tire distributor so needless to say, he is also active during the day. We both love peanut butter ice cream and peanut butter pie but when I saw this recipe for peanut butter pudding, I got really excited. I can use a sugar substitute instead of the sugar and this will be a good choice for dessert.
This recipe for a cooked pudding seems easy compared to some cooked pudding recipes I have seen in the past. I do like the idea of using this in a parfait type glass with the whipped cream and chocolate curls interspersed in the dessert. Nothing better than peanut butter and chocolate together.
