The First Homemade Ice Cream Of The Season – Mint Chocolate Chip

It has been so warm in North Carolina during the past week and so we had to celebrate with our first homemade ice cream of the season. We had mint chocolate chip ice cream yesterday for dessert.  It was so good and creamy.  My ice cream maker is the table top Cuisinart with the bowl that you keep in the freezer. Last week we were very excited about putting the bowl in the freezer to be frozen solidly before we made the ice cream.  The bowl needs to be in the freezer for 24 hours before making the ice cream but it is easier for us to keep it in the freezer during the warmer months.  We can make ice cream on a moments notice.  I also like to make ice cream when we entertain because it is a great do-ahead dessert and a special treat for just about everyone.

The recipe for the mint chocolate chip ice cream was in the brochure with our Cuisinart ice cream maker.  I have made some changes to the original recipe and I made it with Splenda instead of sugar.  We have made the recipe with half and half instead of the heavy cream but it is much creamier with the cream.

Mint Chocolate Chip Ice Cream Made With Splenda

1 cup of whole milk, well chilled

3/4 cup of granulated sugar  or 1/4 cup plus two tablespoons of baking Splenda

2  cups heavy cream, well chilled

1 to 1 and 1/2 teaspoons of pure peppermint extract  (I always use the 1 and 1/2 teaspoons and it blends well with the other ingredients as far as flavor is concerned)

4 ounces of bittersweet or semi-sweet chocolate bar chopped into tiny uneven pieces (This will be added to the above mixture in the last 5 minutes of mixing)

In a medium bowl, using a whisk, combine the milk and sugar or Splenda and stir until the sugar or Splenda is dissolved (about 1-2 minutes on low speed.)

Stir in the heavy cream and peppermint extract.

Turn machine on and pour mixture into freezer bowl through ingredient spout and let mix until thickened – About 25 minutes – Turn the machine off.

Add the chopped chocolate pieces.  Turn the machine on again and let mix for another 5 minutes.

I have always used the semi-sweet chocolate bar and I can’t think of any treat that is more delicious or refreshing.  Happy Monday Everyone!
