July, Fresh Corn and an Ina Garten Recipe!!!

I love summertime and I especially love July because fresh corn is available here in North Carolina. We purchased our first corn of the season last week and I knew without a doubt that I was going to make confetti corn.  That is a recipe I discovered Ina Garten’s “Barefoot Contessa Back to Basics cookbook.  I am also sharing a link to the recipe below from Food

I wrote about this recipe a couple of years ago but I wanted to share it with new readers.  I always think Ina adds special little touches to a simple recipe to make it special.  Adding onion, orange bell pepper and fresh herbs to the corn just makes is so much more flavorful.  The recipe is not any more difficult to prepare than a creamed corn type recipe.  I have made this several times and it is easier to prepare when I cut the pepper and onion ahead of time and have all my ingredients ready to put into the pan in the proper sequence.

  1. mmmmm nothing better than fresh corn! I’ve had some amazing corn already this summer and it has been soooo yummy!!!!!! I may just add this recipe to my list to try!
