Last week for some reason, I started thinking about apple butter. The Fall bazaars will begin at some of our local churches in the next few weeks and I always look for homemade apple butter. I have some store bought apple butter and I have been eating it recently. So, I don’t know if that is what started the idea of apple butter recipes. Then I opened our local newspaper one morning last week and saw a recipe for cinnamon oatmeal bars. I am always interested in desserts that include oatmeal because that is a great stabilizer of the sugar level for a diabetic. After looking at the newspaper, I dismissed the recipe and went through the day.
That afternoon at work, one of my coworkers had the recipes in front of her and I told her how I had been intrigued with the cinnamon oatmeal bars. I told her the reason I liked the recipe is because of the oatmeal. She told me she was diabetic too and asked me to make some for the center. I ripped the recipe page right out of the paper and brought it home. As I browsed through it I realized I had all of the ingredients on hand. Okay so there is some reason I keep having recurring thoughts of apple butter and this could be it.
On Sunday, I made these for our dessert. It was easy to make and we enjoyed it. The combination of the apple butter with the crumb crust was wonderful. The oatmeal added depth to the recipe and the instructions were very easy to follow. The only adjustment I made to the recipe was mixing baking truvia with the brown sugar for the 3/4 cup of brown sugar.
As I was reviewing the recipe, I saw the servings to be 16 pieces. The size of the pan is 8 x 8 inch square and this would produce very small servings. I do think you could use a larger pan and double the recipe. In the South that size portion would just be considered a smidge and might be a little maddening. I was happy to make something that was so tasty and I did not have to roll out a crust or peel any apples.
Making these bars would be a great way to start a new week. Now my next task will be to make these for the girls I work with. Happy Monday Everyone!
