Hot Chipped Beef Dip – This Sounds Wonderful To Me

My friend Dixie gave me a cookbook recently and I absolutely love it.  The name of the cookbook is Cooking with Authority and it was compiled and published by the Charlotte-Mecklenburg Hospital Authority based in Charlotte, NC.  As I looked through the book, I realized that I do not have a cookbook from the Charlotte area and I really should.  My first job after school was in downtown Charlotte and that is where I met my husband.  We lived in Huntersville in northern Mecklenburg county and my daughter was born at Presbyterian Hospital in Charlotte.  As I read through the cookbook, it brought back memories of our start in the Charlotte area.

When I saw the first recipe I am sharing with you today, I knew for a fact that sometime over the Christmas season I will make this dip.  It includes cream cheese and dried beef and those are my favorite ingredients in a cheese ball.  I have never seen the combination in a dip and even though the recipe recommends baking at 325 degrees for 30 minutes, I think it could be adapted to a crockpot.  The second recipe is chilled and served with crackers.  I think either one or both would be a good choice for a family gathering or party.

I have been sharing recipes for some of the wonderful sweet treats of the season but there just isn’t anything better than a creamy dip or cheese ball.  Hope you enjoy this and happy Monday everyone.
