This time of year, we see so many recipes for soup. I have posted my favorite soup recipes to this blog in the past and I was in search of something a little different. Last week on our snow day, I was sorting through my books and saw a small pamphlet of slow cooker recipes from Rival CrockPot. As I looked through the booklet, I saw a recipe for black bean soup and it really appealed to me. I prepared the soup last weekend and it is fairly easy to make after you chop the vegetables and black beans to put them in the crockpot. The recipe makes lots of soup and we were able to share it with friends. The only thing that I did differently was to include a 28 ounce can of tomatoes in my recipe instead of just a cup of crushed tomatoes. The soup was hearty and especially tasty after adding sour cream to it. I served it with multi-grain chips. I never heard of black beans when I was growing up in the South and when I first saw them I did not think they looked very appetizing. However, I have acquired a taste for them and enjoy them. I think different people have different tendencies when it comes to trying food or eating food. I think I am a sight person and if something doesn’t look good, I really don’t care to taste it. I know some people smell their food and if it doesn’t smell appetizing they will not eat it. Without a doubt, I don’t think my Daddy would have ever touched a black bean dish just because he did not think it was appealing and you would never change his mind about it either. I am glad that I dared to taste black beans because I do enjoy them so much now. Thanks for stopping by.
