In the Spring, I love to incorporate the flavor of lemon into my recipes. My all time favorite cake has to be lemon pound cake with cream cheese icing and I think that flavor combination works for almost any occasion. I discovered the recipe I am sharing with you today in Ina Gartner’s Barefoot Contessa At Home cookbook. I have made this several times and I think it would be great for any occasion. It is very easy to make and I am not exaggerating. You don’t even use a mixer. If you follow the directions exactly as listed, the cake will turn out great. I think this could be served for breakfast as a sweet bread and eliminating the glaze for the cake. Probably the biggest challenge is squeezing the lemons for the lemon juice.
