Even though my husband is diabetic and has to eat a special diet, he isn’t picky about what he eats. He never complains about what I prepare and doesn’t ask for anything special to eat. With that being said, I was very surprised the other day when he told me he saw a recipe for banana bread for diabetics and he wanted me to make it sometime. I have mentioned the website diabetic connect.com before and Mr. D is a subscriber to their e-mails. While reading one of them, he saw this recipe for banana bread. As I read it, I saw that it was very simple to make and included wheat flour. In the past, I have not been very successful with incorporating wheat flour into my baking recipes. However, I was very happy with the texture of this bread. It was moist, flavorful and had a wonderful texture. Here is a picture of my creation:

I made the bread exactly the way it is listed in the recipe and my biggest challenge was keeping the bananas until they were very ripe. It always makes me happy to be able to make something that my husband will enjoy. He does very well as far as managing his diabetes but I know that he has always loved banana bread and missed not being able to eat it until now.
