For Easter – A Sugar Free Chocolate Dessert

I can’t believe it is Easter week.  Mr. D and I will spend a very quite Easter together.  Our family will be visiting us later and, of course, we are super excited about that.  I have been making different combinations of sugar free ingredients in the past to create desserts Mr. D would enjoy as he is a Type II Diabetic.  Over the weekend, I wanted to make a quick dessert and I was so pleased with the dessert that I wanted to share it with you.


Chocolate Layered Dessert

2 and 1/2 graham crackers broken into 10 pieces

1 package of sugar free chocolate pudding

1 and 1/2 cups of milk

1 cup of chopped pecans

1 8 ounce package of cream cheese

1/2 cup of baking Splenda

Two tablespoons of skim milk

Line one loaf pan with the graham crackers.

Prepare the pudding according to package directions using the one and one half cups of skim milk.

Let the pudding set for 5 minute to thicken.

While pudding is setting, beat together the cream cheese and the baking Splenda.  Add two tablespoons of skim milk and blend well. Spread over the graham crackers.

When the pudding is set, add the pecans to the pudding mixture and spread it over the cream cheese mixture.

Place in the fridge to chill about 30 minutes.

I garnished my dessert with whipped cream.  Here is how I made it:

1 cup of heavy whipping cream

2 tablespoons of baking Splenda

1/4 teaspoon of vanilla extract

1/4 teaspoon of almond extract

Using a handheld mixer, whip the cream.  Add the Splenda and flavorings and whip until good consistency.

I can remember how discouraged I was when I realized my husband was diabetic.  I thought he would never be able to enjoy food again and I am very proud of Mr. D for being so committed to listening to his doctor and eating correctly.  The least I can do is try to prepare meals that will be good for him but that he will also enjoy. The great thing about this recipe is it could be used with the regular chocolate pudding and you would add one cup of granulated sugar to the cream cheese instead of the baking Splenda.

Growing up, I could not wait for Easter because I loved the wonderful chocolate bunny that would be in my Easter basket.  This is a super easy way to include chocolate as part of an Easter celebration.
