This summer I have discovered a new favorite, purple cabbage. When we visited Savannah in May, I had cole slaw that was so good and it included green cabbage, purple cabbage and carrots. The purple cabbage in the Savannah cole slaw inspired me to try something different from my standard recipe that included green cabbage, mayonaise, evaporated milk and vinegar. I purchased my purple cabbage at our Farmer’s Market and was told the purple cabbage is great on the grill. That could be my next culinary adventure.
Here is my recipe for my Multi Colored Slaw
one and one half cups of chopped green cabbage
one and one half cups of purple cabbage
one cup of chopped carrots
1/2 cup of evaporated milk
1/2 cup of mayonaise
1/4 cup of vinegar
1 tablespoon of onion powder
1 tablespoon of celery seed
1 teaspoon of salt
1 teaspoon of pepper
The amount of mayonnaise and evaporated milk can be increased if you prefer a creamier slaw.
I think the purple cabbage gave the slaw more texture and was especially good on our hamburgers. Yes, that is right, I am a Carolina girl and we do put cole slaw on our burgers. Try it, you’ll like it and thanks for stopping by.
