Beaufort Recipes – Cateret County Caviar, Scalloped Oysters and Peach or Nectarine Tart

If you read my blog post on Monday, you know that I visited Beaufort, North Carolina last weekend.  I shared how charming, peaceful and beautiful the city is.  Yesterday I realized I have a cookbook from Beaufort that was compiled by the St. Paul’s Episcopal Church Women.  I do not remember seeing that church but I like the cookbook.  I am sharing a couple of seafood recipes with you and then a recipe for a peach or nectarine tart.

I see so many southern recipes for fried oysters or oyster stew. I think the scalloped oysters is a great way to prepare them a little differently. As far as the fried Menhaden roe is concerned, I can only say that it lives up to the Southern tradition of frying everything.


It is definitely peach season here in the Carolinas and I think the peach or nectarine tart would be a great choice for any occasion.

I regret that I did not see St. Paul’s Episcopal Church while I was in Beaufort.  We did take a picture of the church below while we were walking through the historic district.  I just wanted to share one more scene from lovely Beaufort, North Carolina

  1. I don’t recall seeing St. Paul’s in Beaufort, but from a quick search on Google Images, it looks lovely and quaint.
