As I have mentioned before on this blog, I do not make New Year’s Resolutions. However, I decided this year that I would become more familiar with cooking with olive oils. I have been using a very good quality olive oil purchased from a local specialty store for quite a few years and I absolutely love the results. We have started using infused olive oils and I love the butter infused and the blood orange oils. However, Mr. D and I have just started experimenting with making our own salad dressings.
A friend gave me the cookbook, “The Mediterranean Diet Cookbook.” As I browsed through it recently, I thought the following two options would be great salad dressings. The dressings are very easy to make and include ingredients that most of us have in our kitchens.
The basic dressing we have been making is a combination of olive oil, aged balsamic vinegar or cranberry-pear balsamic vinegar and a drizzle of honey. We have been very happy with the results. We don’t like quite so much olive oil in our dressing and just wondered if that is a matter of personal taste. We are more likely to have a tablespoon of olive oil and a tablespoon of balsamic combined and are very happy with the taste. We also have purchased an olive oil infused with red grapefruit and I am clueless as to the use of it. If you have any ideas or suggestions, please let me know.
We are enjoying our new adventure of experimenting with olive oil and haven’t been disappointed. We have come a long ways from our Southern childhoods of eating food cooked in lard and fat back. At that time, we only knew Olive Oil as Popeye’s girlfriend.
